I’m thankful that my mom introduced me to romance novels and meatloaf at a tender age. Her appetite for both led to my enjoyment of both when I was age appropriate. Being vegan, I thought I’d said good bye to meatloaf in 2004. I do enjoy a good lentil loaf but it seemed too complex for this assembler to make and not something I could share with mom. Then a pandemic inspiration struck. I served this to the family Saturday and they devoured it!
