Moms, Mom’s Vegan Pandemic Meatloaf and Really?

I’m thankful that my mom introduced me to romance novels and meatloaf at a tender age. Her appetite for both led to my enjoyment of both when I was age appropriate. Being vegan, I thought I’d said good bye to meatloaf in 2004. I do enjoy a good lentil loaf but it seemed too complex for this assembler to make and not something I could share with mom. Then a pandemic inspiration struck. I served this to the family Saturday and they devoured it!

Mom’s  MEATLOAF  RECIPE with Michelle’s Vegan and GF modifications
1.5 lbs Beyond Beef
1/8 bottle of Just Eggs
1 cup GF rolled oats
1 cup nut or soy milk
salt or pepper to taste
favorite barbecue sauce (optional)
Preheat oven to 350 degrees F. Mix first five ingredients thoroughly. Add to a 9×5 loaf pan. I love my silicon one. Bake for one hour. At 45 minutes, I poured barbecue sauce over the top of the meatloaf.
At high altitudes, you may require more than an hour.
